Michelle's Macaroni & Cheese
My mom called this morning looking for a Macaroni and Cheese recipe. This one is EXCELLENT. I took a Martha Stewart recipe and edited it to my taste . . . simple, good, and total comfort food. Everyone I have made it for loves it, I hope you do too. Let me know what you think!
Michelle’s Macaroni & Cheese
Ingredients:
6 Tbs. butter
5-1/2 C. milk
½ C. flour
2 tsp. salt
¼ tsp. black pepper
4-1/2 C. sharp cheddar cheese (grated)
1 C. grated parmesan
1 LB. elbow macaroni
Heat oven to 375 degrees. In medium saucepan over medium heat melt 6 Tbs. butter until bubbly. Add flour and cook, stirring for 1 minute. Heat the milk in microwave until very warm. Slowly pour milk into flour/butter mixture while whisking. Continue cooking and stirring until mixture bubbles and thickens. Remove from heat. Stir in salt, pepper, 3 cups grated cheddar cheese and 1 cup parmesan cheese. Set cheese sauce aside. Cook noodles 2-3 minutes less than manufacturer’s directions. (Inside should be underdone.) Run noodles under cold water after draining. Stir into cheese sauce. Pour into a 9 x 13 pan and top with remaining cheddar cheese. Bake approximately 30 minutes or until as brown and bubbly as you like.

Cyndy Leslie wants to be at Bolsa Chica State Beach digging in the sand for what have to be the largest and prettiest shells I have ever seen at a Southern California beach! I would love to spend every day of summer there!! Of course the kids would have to be with me - they have been converted to beach bums!!

New Bloggy!
Since 4th of July is almost here, I thought I would add a recipe for you. I hope you like it. If you make it, let me know what you think. It is my grandma's recipe and truthfully, I have never tasted a better cheesecake.
Mama Sandidge's Cheese Pie
Crust:
6 whole graham crackers crushed, add ½ C. sugar, 1 tsp. vanilla, ¼ C. melted butter. Mix and shape all ingredients into a deep pie plate.
Filling:
Smooth 12 ounces Philadelphia cream cheese, add ½ C sugar, and 2 eggs. (I use my mixer to cream until smooth.) Pour into pie shell. Bake 20 minutes at 375 degrees. Cool about 1 hour, and then add:
Top Filling:
1 pint (2 cups) sour cream, 3 Tbs. sugar, 1 tsp. vanilla. Mix and spread on top of the filling. Bake at 375 degrees for 7 minutes. ( It may seem underdone but it won’t be.) Chill in fridge and enjoy!
Note: You may need up to ½ C. of melted butter. Add butter until crust handles and shapes well.
